1429 Latitud — its process

1. High-Altitude Cultivation

The coffee is grown between 1,300 and 2,100 masl, in mineral-rich volcanic soils.
The elevation and cool climate allow for slow cherry maturation, which promotes the development of natural sugars.

Cup result:
Enhanced sweetness, bright acidity, and defined fruity notes.

2. Selective Handpicking

Harvesting is done entirely by hand, cherry by cherry, selecting only fully ripe fruit.
This ensures purity and prevents mixing different levels of ripeness.

Cup result:
Clean flavor and a consistent sensory profile.

3. Honey Process

After harvesting, the outer skin is removed, but part of the mucilage —a sweet, sticky layer similar to honey— remains attached to the bean.

Depending on the amount of mucilage retained, the process may be classified as yellow, red, or black honey.

4. Drying - Roasting

The beans are spread out on patios or raised beds and dried slowly under the sun, being turned multiple times for even drying.

This stage can take 10 to 20 days, depending on the weather.

Once dried and rested, the beans are roasted in small batches, preserving their origin and character.

A darker roast profile is used to highlight: caramelized sweetness, intense body, sweet notes of citrus and fruit.

5. Cup Profile

Thanks to this process, 1429 Latitud develops a flavor profile with:

  • Sweet, fruity notes
  • Bright citrus tones
  • Aromas of dried seeds
  • A clean and balanced finish

Our Coffee Growing Regions

Our coffee is grown on several family-owned farms located in the Brumas del Zurquí, Tarrazú, and Dota regions.

La Legua, Aserrí
Mountainous region of Costa Rica known for its cool climate, volcanic soils, and abundant mist that covers the coffee farms most of the year. These unique conditions allow for the cultivation of high-quality beans with complex, natural aromatic profiles, making it a privileged area for specialty coffee.
Dota
A high-altitude coffee-growing region in Costa Rica, recognized for its mountainous slopes, rich soils, and a microclimate ideal for the development of exceptional beans. Its cool days and cold nights allow the coffee to mature slowly, resulting in more defined flavor profiles, with balanced acidity and sweet, fruity notes that set the specialty coffees from this area apart.
Tarrazú
An emblematic coffee-growing region of Costa Rica, located at high altitudes with fertile volcanic soils and a cool climate that favors the development of exceptional-quality beans. The temperature variations between day and night allow for a longer fruit maturation, resulting in coffees with bright acidity, natural sweetness, and aromatic notes ranging from floral to fruity. This positions Tarrazú as one of the most prestigious regions in the world of specialty coffee.
